The objective of this study is to evaluate tannin content in Galium tunetanum Poiret by two methods of extraction. The choice was based on the quantification with the hemoglobin precipitation assay and to investigate the antioxidant capacities of the best tannin extraction method by different test such as radical scavenging activity (DPPH), the β-carotene bleaching assay and the reducing power.
